If you know tea, skip down to our offerings. If you don't, following is a definition of the types of "teas" commonly served. Tea proper is defined as either the leaves or parts of the plant Camellia Sinensis. What is sometimes served as tea may include other ingredients which are not part the plant Camellia Sinensis.
All of our teas are available for retail purchase by the tin.
Tea is classified into:
- Green tea does not undergo the oxidization process. It has an herbaceous flavor and is green or yellowish in color. By eliminating the fermentation process, the dry leaf retains its green color, natural goodness and original beauty. Light in color and flavor, green tea has lower caffeine content than other tea types and is loaded with health benefiting antioxidants. It is brewed at a cooler temperature than black tea.
- Black tea/flavored black tea is fully oxidized and often yields a full-bodied amber brew. To add a varying taste to black teas, they are oftentimes flavored with bits of fruit or scented with oils and flower petals. The drying process naturally leaves black tea with more caffeine than other types of tea.
- Oolong tea is partially oxidized and often referred to as a “semi-fermented” tea. The oxidization process continues for a predetermined time based on the master's skill and knowledge. It can be processed closer to green or black.
- White tea is the rarest and most delicate type of tea. It is plucked by hand within two days between the time the first buds become fully mature and the time in which the leaf unfurls. White tea contains the same antioxidants found in green tea, but since it undergoes less processing, white tea is believed to be more beneficial to your health than other types of tea.
- Herbal tisanes/fruit tisanes are comprised of herbs, spices, fruit pieces and flavorings. They do not contain the traditional tea leaves of the Camellia Sinensis plant. Herbal “teas” come in many unique flavors and are naturally caffeine free. However, small amounts of caffeine can be found in the Green and Flavored Green flavors.
